Kimchi Apricot Sauce

I know what you are thinking looking at the photo; where is kimchi? It doesn’t look like a Korean dish at all.
Well, I’d say it’s a fusion cuisine of French and Korean. If you’ve been following my Korean dinner stories in France, you would remember me giving away a jar of home-made kimch to French guests.

This dish was maded and photographed by the French guy, who had promised to experiment with kimchi and let me know the results. He really kept his promise and created this wonderful dish and photos, by which I was very impressed. At the fist glance, I thought kimchi would be hidden somewhere inside the bacon rolls as normal people would have guessed.

Intead, he made a sauce mixed with apricot. How genius! His creativity with kimchi was quite refreshing and inspiring indeed, which shows that great ideas often come out of a novice. As he didn’t have any prejudices about kimchi, he had the freedom to play with it according to his perception of kimchi and its taste.

I hope this post would give more inspiration to people who try to expand Korean cuisine and the world of kimchi.
