Korean Spicy Chicken Stuffed in Pumpkin 단호박 찜

i am sorry for being soooooooo late and for being busy with my new work ‘^^
first i would like to give e biig hiiii to eatplayluv and congratulate her for her dinners ^^
for my comeback i post this misty yoon’s recipe which i found creative and easy to do ^^
i hope you like it ^^

Recipe~

1 medium sweet pumpkin -Kabocha

1 pound skinless chicken breasts, cubed

1 cup milk

2 tablespoons sake

1 cup Korean rice cake, 떡 (optional)

1/2 cup Mozzarella Cheese

2 Green onions,chopped

1 jalapeno,finely chopped

2 Korean red peppers, chopped

1/2 medium onion, chopped

Olive oil

Additional 1 teaspoon chili flakes

1 teaspoon sesame seeds for garnish

salt & pepper
Wash and scribble the pumpkin well; place in the microwave oven and run it for 2-3 minutes.


Place the pumpkin on a cutting board, with a knife tip and mark a circle first (just big enough so that you can scoop out seeds) and then carefully cut one the circle.


Remove the top and seeds. With the top back on, place the pumpkin back into to microwave oven ; cook another 5-8 minutes depending on the size of the pumpkin. (You can also steam the pumpkin.) Set aside.




In a small bowl, combine chicken pieces and milk; mix well and leave for 10-20 minutes in the refrigerator. Drain, season with sake, 1/8 teaspoon pepper and 1/4 teaspoon salt. Set aside.

Lets make the sauce for chicken.

3 tablespoons Ko-Choo-Jang (Korean red chili paste)

3 tablespoons Korean red chili flakes(고추가루)

2 tablespoons Soy sauce

2 tablespoons sugar

2 tablespoons honey

1 tablespoon ketchup (optional)

1 tablespoon oyster sauce

1 tablespoon minced garlic



In a large saute pan over medium heat. Add 1-2 tablespoons oil, add minced garlic, cook for 10 seconds. Then add chopped red peppers,onion and green onions. Add 1 teaspoon of red pepper flakes. Saute until veggies are tender



Add chicken pieces and saute,stirring occasionally, saute until chicken pieces are fully cooked. Add prepared sauce and rice cakes. Saute for another a few minutes.

Transfer to a bowl and (If you don’t like pumpkin, eat it like this… good as it is.)

Pour into cooked pumpkin

Add generous amount of cheese on the top.

Preheat oven to 400 degrees and bake until cheese turns gold brown and bubbly.(took about 8-10 minutes)

Cut the pumpkin into 6-8 pieces and open up slowly.
