Gan-jang ge-jang, or ge-jang (게장), is quite simply raw crab meat marinated in soy sauce. Not to be confused with yang-nyum ge-jang, a spicier version of the dish, gan-jang ge-jang is the soy sauce version. I first heard about it from one one my students who claimed it was her favourite Korean dish. ”You’ve never tried it?” She asked surprisingly.
I thought I had been missing something until I sat down to breakfast one morning while staying with a Korean family. In the middle of the table was a colourful dish of ge-jang sprinkled with sesame seeds. I felt a little put off by something so raw in the A.M, but I didn’t want to be rude so I picked up a claw and sucked the juicy meat right out of the shell. It was heavily marinated in soy sauce which dominated my taste buds and made me forget that I was eating uncooked crab. I didn’t hate it but I probably wouldn’t order it as a main course at a restaurant.
